30-Minute Calabrian Shrimp Scampi

Buttery shrimp scampi with Calabrian chilis, lemon, garlic and white wine.

Recently, I’ve been all about recipes that feel a little fancy but are secretly low-effort, and shrimp scampi is the definition of high payoff, low effort. It has just a handful of ingredients, comes together quickly, and alway makes dinner feel a little more special.

This version gets an extra kick from Calabrian chilis, which melt into the lemony butter sauce and add just enough heat to wake things up a bit. I used a heaping tablespoon, but feel free to add more or less depending on your spice preference. You can even leave them out entirely if heat isn’t your thing.

Tossed with linguine, juicy shrimp, fresh parsley and a shower of parmesan, it’s a gorgeous summer dinner that’s on the table in less than 30 minutes.


A Note on the Sauce

Don’t stress too much about the exact amount of pasta water. The key to a great shrimp scampi is adjusting the sauce as you go. If it looks dry, add another splash of pasta water. If it feels a little thin (or watery), keep tossing and simmering until it thickens. Between the butter, parmesan and starchy pasta water, you’re looking for a glossy sauce that clings to the noodles.


Tips to Take It from Good to Great

  • Don’t overcook the shrimp. They only need about 1 minute per side (2 minutes max for very large shrimp) and will continue cooking slightly when added back to the pasta.

  • Use freshly grated parmesan. It melts much more smoothly into the sauce and helps create that silky, glossy finish.

  • Reserve more pasta water than you think you’ll need. The sauce should look slightly looser in the skillet than you want it on the plate. A splash of pasta water can bring everything back together if the sauce tightens up.

  • Add the butter gradually. Stirring in the butter a little at a time helps create a richer, more emulsified sauce.

  • Taste before serving. You may want an extra pinch of salt, squeeze of lemon juice, or spoonful of Calabrian chili paste at the end.
