You know I love my one-pot meals, so it only felt right to turn this cold-weather classic into a one-pot version. Beef stroganoff in any form is peak winter comfort, but this one keeps everything you love about the original, only easier, faster, and made with shells that soak up every drop of that glossy, velvety sauce.
I finely diced the mushrooms so they melt right into the base, giving you all that deep umami without any noticeable mushroom chunks. And I know it’s not traditional, but I tossed in Parmesan and peas because life is short.
